Banana Bread (as seen on Inside Edition)

Ingredients:

180 grams unsalted butter, softened

100 grams brown sugar

50 grams caster sugar

2 eggs, room temp

1/4 cup neutral oil

325 grams mashed banana

275 grams All-purpose flour

3/4 teaspoon salt

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon cinnamon

Method:

Preheat oven to 350 degrees. Spray and line a loaf pan with parchment paper and set aside.

In the bowl of a stand mixer (or working with a large bowl and whisk), cream together the butter and sugars until light and fluffy.

Add the eggs one at a time, fully incorporating the first egg before adding the next. With the mixer running on low speed, stream the oil down the side of the bowl. At this stage, what just looked a tad curdled should now be silky smooth!

Add in the mashed banana and mix to combine.

In a separate bowl, whisk together the dry ingredients, breaking up any clumps of flour or baking soda.

Add the dry ingredients to your banana/butter mixture and, mixing on low, combine just until the flour disappears.

Spread the batter out evenly and top with a few tablespoons of sugar for a crusty top, or a banana sliced in half. Use your imagination and be creative!

Spread batter into your lined loaf tin and bake at 350 degrees for 30 minutes. Lower the temperature to 325 and continue baking for an additional 15-25 minutes or until a skewer inserted comes out clean.

Cool completely before slicing and enjoy!
